But it's tricky to get right. There are a few potential stumbling blocks in the process.

This ciabatta recipe gives you all the insight you need to make your own, homemade ciabatta and get it right, first time.

So, what is ciabatta?

Ciabatta (Italian for 'slipper') is a square, flattish bread, designed to be loaded with toppings. Usually made with white flour, it has an open texture, with large air-bubbles.

The dough is extra-fermented, for a slightly sour flavour and is often coated in cornmeal (although in this recipe I substitute semolina because it's easier to obtain) to make the crust extra crunchy.

It's tricky but I'll show you how.

It's tricky to make because of the extra fermentation needed to achieve the authentic ciabatta flavour. Also, it is awkward to work with the wet dough necessary to achieve the open texture. At the same time, you want the crust to be crunchy without letting the thin bread become too dry. A lot to think about, but perfectly easy to achieve, when you know how.

Here goes...

Ciabatta Recipe

You will need:
250g plain flour
3g dried instant yeast
A large pinch salt
Approximately 180ml hand-hot water to mix
Semolina to coat (optional)

Mix your dough well in advance. I suggest doing this the night before you want to eat the bread.

1. Combine the flour and instant yeast in a large bowl.

2. Add the water, little by little, until you have made a slack dough.

3. Leave the dough to ferment overnight. The longer you ferment the dough, the sourer the bread will taste. If you prefer a milder flavour, shorten this stage to an hour.

4. When you return to the dough, mix in the salt. I usually do this by hand as it's easier to squeeze and knead the dough, rather than using a spoon.

5. Tip the dough onto a floured surface and knead for a few minutes, until your dough has a smooth, stretchy texture. It should still be quite wet, which makes it tricky to handle. It will stick to the work surface and to your hands. Try not to add too much extra flour as you need the wetness in order to achieve the characteristic open-crumb texture.

6. Divide your dough into four pieces. Stretch each piece to a long, thin strip and fold it into three. The folding helps to incorporate extra air into the dough, for that all-important texture. Try to not squash the air out of the dough at this stage. Repeat the stretch and fold process if necessary, to create an oblong bread about 3cm thick.

7. Gently coat the bread in semolina and place it on a greased baking tray.

8. Leave it to rise again for about half an hour before baking at 200oC for 20 minutes.

Now, to achieve that crunchy crust

There is one further stage to this process.

Use a (clean) plant mister to lightly spray the bread with water before you put it in the oven. Repeat this spraying process a couple of times in the first few minutes of baking.

Your bread is cooked when it can be lifted off the tray easily and sounds hollow when you knock on its bottom.

Serve immediately - ciabatta doesn't keep well, which is another good reason to bake it yourself.

Chop it up - if all else fails, pre cook the broccoli and let it cool a little and put it in a food processor. Chop it up until it is not recognizable and add it to whatever dish you are cooking. Your children will not even know it is there.

Shakes - this might sound weird but it works. Make a milkshake with milk, ice cream, and chocolate syrup. Add some broccoli to the shake (make sure the kids aren't watching!) and blend it some more. As long as you use a chunky type of ice cream, your kids will not realize the broccoli is there and hopefully they will drink the shake too fast to notice any stray green bits!

When we get together there are twenty seven people.  Each year one of us cooks for a different segment. We put the dinner segments in a hat. After dinner, after all the dishes are done and we're relaxing we choose what our dishes will be for the next year. The menu is broken up into appetizers, before and after dinner drinks (for the adults), meat, stuffing/potatoes (starch), vegetables, rolls, desserts. Two people are responsible for meat, two for stuffing/potatoes and two for vegetables. One for appetizers, one for before and after dinner drinks and one for desserts. And, now that there are ten of us every year one lucky girl gets a get out of jail free card, which means she doesn't have to cook the next year!

I know everybody's favorites, and like to add a few new things.  I like to make lots of different types of desserts for the family. One of my favorites is Black Bottom Cup Cakes. One year when my sister-in-law picked the Christmas dessert portion of our meal I gave her a lot of advice on recipes as she really isn't comfortable baking. I went to her home two days before Christmas and helped her make the traditional Red Velvet Cake. She did it really well and is now a pro!

It All Begins with Tomatoes

The most common type of pizza sauce is a tomato based sauce. Using fresh, ripe, locally grown tomatoes is important for a great tasting sauce. Summer is the best time of year to purchase tomatoes, but often you can find locally Now for the best tomato-based sauce, use fresh tomatoes that you have grown yourself. You should avoid supermarket-bought, fresh tomatoes because these are probably ripened through an artificial chemical process. The best type of tomatoes for pizza sauce making is the plum variety.

To prepare your tomatoes, you should remove the seeds and cut these into small chunks. Use a blender to reduce fresh tomato into paste. Add some water and grind well to ensure uniform consistency and texture. However there's nothing wrong with a chunky tomato sauce if you prefer this type of sauce; as long as the pieces are more or less similar in size, then cooking problems should not arise.

Once you have your tomato base, evaluate its thickness. The best tomato base is a thick one. If you have added too much water during the grinding stage, check now if the sauce is not too thin. Thin pizza sauce will run off and will merely make the dough soggy if so. If you have made an excessively thin tomato base, you should let the lot simmer on low heat to let some of the water to evaporate. Beware that heating your tomato base to get rid of excess water will affect the flavor of your tomato base.

If you don't have your own tomato patch, then just use the canned stuff. It is best to use slightly thick tomato sauce - it is thick, has enough moisture level yet hasn't undergone as much heating (if at all) as tomato concentrate products. On the other hand, you can buy canned tomatoes that haven't been converted to sauce or paste yet. You can use your blender to prepare your tomato base, in this case, adding as much water as you need to achieve desired glueyness.

Then Come the Pizza Sauce Flavorings and Spices

After preparing your tomato base, you should prepare a large, non-stick flat pan for cooking the sauce. To start with, heat some olive oil. Use the extra virgin variety if you want a stronger olive taste; this is especially applicable if you are using olives on your pizza toppings as the olive oil in the sauce will reinforce the flavor of one of the toppings. After heating the oil, you should melt some butter in it.

After heating oil and melting butter, you should start sauteing the usual ingredients: onions and garlic. Mince the onions and garlic if you want the best possible flavor. You can even transform your garlic into garlic paste then increase the amount of garlic used if you want a distinctly garlicky taste. When the garlic is mildly brown and the onion transparent, pour in the tomato based that you have made according to the above instructions. Mix everything but don't take too long. After a few seconds of adding and stirring the tomato, onion and garlic mixture, you should add salt, pepper (crushed pepper works best for a hotter pizza sauce recipe) and when nearly cooked, all the other spices.

The first ingredient that comes to mind is salt. Another is sugar. The first one is definitely a requirement while the second one is optional; people who love a sweet-tasting tomato pizza sauce can add sugar.

Italian style pizza naturally has basil and oregano. If you are using the fresh leaves, chop them into small pieces. If you are using dried herbs, crush them first using your fingers or a mortar and pestle assembly to release trapped flavors. Add the herbs and spices during the last few minutes of simmering.

The pizza spices used varies. If you want tasty pizza sauce, use fennel seeds and laurel leaves. If you want an even stronger flavor, use lots of parsley or you can use the laurel bark; however, be sure to remove the laurel bark and the laurel leaves after cooking the pizza. If you want a spicy pizza sauce, however, add some cayenne pepper or some paprika to your pizza sauce mixture.

Other pizza sauce ingredients are cheese, beef stock (or the instant variety if you have no time to make beef stock), and mushrooms. Basalmic vinegar and alcoholic beverages, moreover, are great for imparting a slightly piquant taste to your sauce. The same thing can be achieved with pure fruit juice such as lemon juice.

Do not forget that you have the option of adding as many ingredients and spices to your pizza sauce. It's all a matter of taste, anyway. And here's one final tip: if you like a dish so much - say creamy carbonara pasta - try recreating the sauce and using it on your pizza. If it doesn't work, then use it the way it has always been used (e.g. prepare some pasta to use with your carbonara sauce).

You can store juices overnight or for a short period of time in the refrigerator, but let the juice warm up to room temperature before drinking when possible. Vary the quantities of ingredients to get a different taste. For example; adding more apple will give a sweeter taste, while more celery or green vegetables will give the juice more of a bite.

Carrot Juicing Tips

Here are a few tips to keep in mind when juicing carrots:

1) Never looking into the food chute while the juicer is running. From time to time small particles of carrots get propelled back and can cause damage.

2) Only use the plunger to push the carrots down into the chute. Using an item knife or a wooden spoon can be potentially dangerous.

3) To save time purchase a greater number of thinner carrots instead of the fat ones. This way you will not have to spend time cutting them to fit the chute on the juicer. If you purchase a juicer with a very wide mouth then it does not matter.

Every family has its own meat loaf recipe and many of them start with a soup mix. However this family recipe, given to me years ago by my mother-in-law, is made-from-scratch meat loaf. I'm not talking about the mushy, mystery meat loaf you may have eaten at restaurants. No, I'm talking about all beef meat loaf with ketchup and brown sugar topping.

Quality ingredients are what make this meat loaf so good. First of all, the recipe calls for only one kind of meat - ground beef. The bread crumbs are fresh, not something from a can. The onion is also fresh, though I've used dehydrated in a pinch. As for the topping, it makes every mouthful of meat loaf extra delicious.

To make the meat loaf healthier I've changed a few of the ingredients. I use 90% or 93% lean ground beef, not the cheaper, fattier kind. Skim milk replaces whole milk. Instead of white bread crumbs I use whole wheat bread crumbs. Often I use no-calorie brown sugar instead of regular.

THE BEST MEAT LOAF IN THE WORLD

INGREDIENTS: 3/4 cup fresh wheat bread crumbs; 3/4 cup skim milk; 1 1/2 pounds 90% or 93% lean ground beef; 2 large eggs, beaten; 1/4 cup grated onion; 1 teaspoon salt; 1/8 teaspoon freshly ground pepper; 1/2 teaspoon dried sage

Combine ingredients in a large mixing bowl with a fork. (Don't over-mix or the meat loaf will be tough.) Turn meat mixture into a meat loaf pan. Smooth the meat loaf with the tines of the fork. Prepare topping with 1/4 cup ketchup, 3 tablespoons brown sugar (or no-calorie brown sugar), 1 teaspoon dry mustard, and 1/4 teaspoon nutmeg. Spread topping over meat loaf. Bake in 350 degree oven for 1 hour. Let meat loaf cool for 10 minutes before slicing. Makes 8-10 servings.

To create layers, prepare one box of Jello at a time. Mix 1
envelope Knox gelatin with 1/4 cup cold water. Add 1 cup boiling
water and 1 box Jello. Pour Jello into greased 13x9x2-inch baking
pan. Refrigerate 15-20 minutes until set.

Pour 3/4 cup filling over set Jello. Chill 15-20 minutes.
Continue layering Jello and filling, ending with Jello on top.
Chill each layer 15-20 minutes before adding next layer.

Rainbow Trout Recipes

2 tablespoons chopped parsley

2 tablespoons lemon juice

1½ teaspoons seasoned salt

6 tablespoons olive oil

1 large onion-thinly sliced

2 cloves garlic

1 large tomato, thinly sliced

4 teaspoons white wine

Spray 13x9 inch pan with liquid shortening. Arrange fish in pan and sprinkle with parsley, lemon juice and salt. Heat oil in small skillet: fry onion and garlic till limp. Pour over fish. Place tomato on fish and pour wine over fish. Bake 350 degrees 30-45 minutes. Serves 2-3.

Grilled Trout

6 small trout

Salt or seasoning for fish

Prepare trout: rub with oil and sprinkle with salt or seasoning. Place in fish basket if available or place on preheated grill rack and cook for about 15 minutes, turning as needed. Option: Rinse trout under cold water and stuff with lemon wedges and onions. Wrap in foil and cook on hot charcoal or gas grill for 6 minutes on each side. Do not overcook. Open foil and, with back of fish facing you, remove skin. There is a line
down the middle dividing the back meat and the belly meat. With fork,
Pull the back meat toward you and belly meat away from you and remove bone.
Squeeze on fresh lemon. Salt and pepper as needed.

Rainbow Trout with Artichoke Heart

6 Rainbow Trout fillets

1/2 cup butter

4 tbsp. green onion, chopped

2 tbsp. parsley, chopped

3 cloves garlic, minced

1 tbsp. lemon juice

8 oz. can of sliced mushrooms, drained

14 oz can artichoke hearts, sliced, and drained

1 tsp. salt

1/2 tsp. cayenne pepper

Pat rainbow trout fillets with a paper towel and place in flat baking dish. Melt butter in sauce pan and sauté the green onions, parsley and garlic until tender. Add lemon juice, mushrooms, artichoke hearts, salt and pepper. Cook for a few minutes until heated thoroughly. Pour sauce over the filets and bake in 325 degree F oven for about 18 minutes or until fish flakes with a fork. Serves 4.

Cooking Instructions:

  • In a medium-sized mixing bowl, sift the cake flour, all-purpose flour, salt and baking powder. Repeat the step three times then set aside.

  • Fold in the flour mixture, alternately with milk and water, to the beaten egg yolks. Add the vanilla and mix thoroughly. Set aside.
  • Beat egg whites until soft peaks are formed. Add the remaining ¼ cup sugar and go on beating the mixture until stiff. Fold in the egg batter. Mix well and pour mixture in puto molder about ¾ full.
  • Top with slices of cheese. Cover with clean cheese cloth.
  • Steam for 25-30 minutes. You will know the puto cheese is cooked when you insert a tester in the center and it comes out clean.
  • To retain the solid shape of the puto cheese, let cool for a few minutes before removing from the puto molds.

2 medium onions, sliced

Coat the chicken breasts with 1 Tbsp. of olive oil and place into baking pan
Sprinkle chicken breasts with sea salt
Bake chicken uncovered in 350 degree preheated oven for 45 minutes
Place onions in a skillet with 1 Tbsp. of butter and 1 Tbsp. olive oil then sauté until translucent
Place bell pepper in a separate skillet with 1 Tbsp. of butter and and 1 Tbsp. olive oil then sauté until slightly browned

Serve with a side of sauteed onion and bell pepper. Place the onions on one side of the chicken breast and peppers on the other. This will add visual interest to your dish and keep the flavors separated.

A side dish of whole grain pasta and marinara sauce (marinara from a jar is fine) will add a great accoutrement to this dish. Garnish with grated Parmesan cheese.

Served with a hearty red wine this simple meal becomes an elegant offering fit for guests.

During the summer months, I like to make my own homemade spaghetti sauce. Once I have it made, I will freeze or can it for future use. This particular sauce is great for spaghetti, lasagna, rigatoni, ravioli and manicotti.

Italian Spaghetti Sauce Recipe

6 lbs. lean ground beef
2 (8 ounce) packages of pepperoni
2 (12 ounce) cans tomato paste
2 (15 ounce) cans Italian tomato sauce
5 (29 ounce) cans tomato puree
2 1/2 teaspoons seasoning salt
1 teaspoon onion salt
2 teaspoons granulated sugar
2 bay leaves
2 teaspoons garlic salt
1/2 teaspoon garlic powder
2 teaspoons table salt
1 teaspoon fresh ground pepper
2 tablespoons oregano leaves
1 1/2 teaspoons red pepper
2 teaspoons chili powder
2 tablespoons dried onion
1/2 teaspoon rosemary
1/2 teaspoon thyme

How to Make Your Own Homemade Spaghetti Sauce For Canning

Brown the lean ground beef in a large frying pan, drain off burger grease. In a large stock pot, combine cooked beef, pepperoni, tomato paste, tomato sauce and tomato puree. Cook for 10 minutes on medium heat. Turn heat down to simmer and stir in all of the spices. Simmer the sauce for 45 to 60 minutes to allow all of the spices to infuse into the sauce mixture.

How to can your spaghetti sauce:

Sterilize and clean your canning jars. (I prefer using quart-sized wide mouth jars). Ladle hot mixture into hot jars. Clean the rims of jars with a clean cotton towel. Seal jars and then process in a water bath canner for 30 minutes. Remove jars from canner and allow them to cool down in a non-drafty area of your kitchen.

Note: You can also freeze the spaghetti sauce in freezer safe airtight container for up to 1 year.

Does Mozzarella Cheese Go Bad?

All cheese goes bad, but it all goes bad in different times and in different ways. It is important that you properly care for the cheese that you purchase and store it correctly so that it will stay for as long as its shelf life allows. Cheese that isn't taken care of properly will end up going bad and will be unsafe to eat. If you take care of it, you may be able to get more shelf life out of your cheese and use your mozzarella cheese to the end of the ball, loaf, of whatever other form it came in.

Fresh mozzarella or the buffalo mozzarella has a much shorter shelf life than the other kinds of mozzarella cheese. It is important that you use this mozzarella cheese up as quickly as you can. This cheese has not been aged, so it doesn't have the same shelf life as the ones that have been aged properly. It is important with fresh mozzarella that you use it up in a couple of days. If you see mold on this kind of mozzarella cheese or if you see that it has an odd smell to it, you are going to want to toss it.

If you are purchasing mozzarella like part skim or the whole mozzarella that has been aged and through the entire cheese making process, it will have a longer shelf life. Frozen homemade pizza dough preparation: If you have prepared pizza dough the night before and left it in the refrigerator for next day's baking, take it out in the morning and let it rise for at least several hours before you use it. Again, the less the yeast used, the longer the rising period required.

To make a thin pizza crust: If you are aiming for a thin crust pizza, you will want to use less dough per pan. You can also just stretch your pizza dough more on the pan. Doing this will naturally reduce the crust thickness.

To get a thick pizza crust: For a thicker crust, you need to use a pizza pan with a smaller circumference, use more pizza dough per pan or stretch out the dough less. The result would be increased crust thickness.

To get a crispy pizza crust: For a crispy pizza crust, it would be best if you reduce the amount of water. Drier pizza dough usually means a crispier pizza crust. Stiffer pizza dough also means crispier crust so it would be best to use flour with high gluten content if you want a crispy crust.

For a soft and gooey crust: To get a soft and chewy crust, you need to add more water to your dough mixture or use less flour. More moist pizza dough means softer pizza crust. To achieve better results, use flour with low gluten content. You may make gluten-free pizza dough by using gluten-free flour

If you live in a high-altitude location: Be mindful of the effect of high altitude on pizza dough. A higher altitude means less air pressure so the dough will rise faster, and it means a faster rate of evaporation so the dough will dry out faster. Thus, if you are in a high-altitude location, it is generally advisable to use more water and less yeast in your pizza dough mixture than you would normally use if you were in a low-altitude location.

It is a claim I have made for many years but ultimately the worlds best hamburger recipe is down to your personal tastes. That said, in my humble opinion, this is the simplest but without a shadow of doubt the best hamburger recipe in the world!

To achieve perfection you will require some ground minced beef of extraordinary proportions this being 1 to 1.5 pounds of minced chuck steak. This was easy for me being a Master butcher of course, but you will need to ask your local butcher nicely, and I am sure he will be only too happy to oblige. The reason we are looking for ground mince using only the chuck meat is due to the fat content. The ultimate hamburger requires around a 20% fat content to flavour the meat whilst cooking and the beef fat marbled within the chuck meat is perfect for this.

You will need to be careful when handling the mince and mixing, use your hands but do not over mix the ground beef, for perfection purposes the heat of your hands will start to break down some of the fat content, and we want this to occur once it is cooking.

I'm going to not only show you the best hamburger recipe, but I'm going to show you how to cook the best stovetop hamburger. There are a few secrets to this, and I do love to grill out in the spring and summer all the time - but you can actually cook hamburgers and cheeseburgers in your kitchen on the stove by frying them to perfection! This is how we make the best burgers indoors in the winter time!

What you will need for ingredients:

* about 3 lbs certified angus beef ground chuck (tastes and cooks best)
* about 1/3 a sweet vidalia onion diced
* about 1/3 green pepper diced
* salt and fresh ground pepper - 1 tbsp each
* 2 tbsp fresh minced garlic (from the jar, fresh has a bit too much bite)
* 1 tbsp Chef Paul Prudhomme's Magic Seasoning Salt
* Kraft Mozzerella Deli Cheese Slices and American Cheese Slices
* Toppings like fresh lettuce, tomato, onion, etc.
* Hamburger condiments

Best Stovetop Hamburgers Recipe

The first thing you need to do is put your ground beef in a large mixing bowl with the garlic, salt, pepper, Magic Seasoning, and diced onion and green pepper. Mix well. Make patties, we make 1/2 lb burgers so 3 lbs of ground chuck yields 6 burgers. You CAN make burgers this thick on the stove in 10-12 minutes and THEY WILL NOT be PINK in the middle AT ALL!

Next turn up the heat on your burner to high and set the timer on your stove for about 6 minutes. You are not going to flip or press or do anything to these burgers for the entire 6 minutes. Find the tightest fitting lid you can find and keep this pan covered (don't peek) the entire 6 minutes. When your timer goes off you're going to take the lid off and set it in the sink (it's very hot and wet underneath and you don't want that dripping all over your stove).

Flip the hamburgers in the pan with your spatula being careful not to splatter the grease on yourself. Like the picture, you may notice one or two of them darker than the others, and that is where the hotspots are on your burner. Rotate the pan 180 degrees if needed to cook the rest of the way. Once they are flipped, put the cover back on your pan and set your timer to 6 minutes again - but this time turn the heat down to med-high. You are not going to turn these burgers again until they timer goes off - and you will not remove the lid.

The reason that these burgers are so juicy is because they are only turned one time. The reason they cook so well leaving no pink in the middle is the way they cook with the lid on - it's like steaming vegetables and cooks them through and through. You cook them on high the first half because they are raw, and turn the heat down when they are flipped because they are 2/3 done. When the final 6 minutes is over, take off the lid and turn down the heat to low. Then quickly put one slice of mozzerella on each burger, and then one slice of American on top of that. Put the lid on and cook 60 seconds, then take the lid off and turn the heat off - you burgers should look like this picture!

Then all you have to do is put your burgers on a bun and top them with what you like and you're good to go! I personally like lettuce, tomato, onion, mustard and ketchup! These burgers are very tasty, very good - and just like the huge bistro burgers you would get at any one of the best restaurants!

This recipe makes two pizzas, so you will have enough to feed eight people. Serve this Greek lamb pizza with a green salad, maybe a Greek salad with black olives, halved cherry tomatoes and feta cheese cubes, and you will have made a nutritious dinner, which will thrill the whole family.

How to Make a Delicious Lamb and Feta Cheese Pizza

You will need:

For the Marinated Lamb -

  • 12 oz lamb, cut into strips
  • 1 garlic clove, crushed
  • 3 teaspoons oregano
  • 2 teaspoons soy sauce
  • 1 teaspoon salt
  • 3 tablespoons olive oil
  • 3 tablespoons lemon juice

For the Pizza Crust -
  • 2 tablespoons instant yeast
  • 1 1/2 cups warm water
  • 4 cups cake flour
  • Pinch each of oregano, basil, thyme, onions salt, chervil, garlic powder, and salt
  • Pinch of freshly ground black pepper

For the Toppings -
  • 1 onion, sliced thinly
  • 3 oz mushrooms, sliced
  • 6 oz sun dried tomatoes, chopped
  • 4 oz Greek olives, pitted
  • 13 oz feta cheese, crumbled
  • 13 oz mozzarella, grated
  • Olive oil, for frying
How to make it:

Put the lamb in a glass bowl. Combine the marinade ingredients and pour them over the meat. Mix well, cover, and marinate for 2 hours in the refrigerator. Pour the warm water into a bowl, sprinkle the yeast on top, and leave it for 5 minutes. Add half the flour and all the seasonings. Stir until you have a smooth batter. Add another cup of the flour and stir until you have a dough ball.

Keep adding more flour, until you have a non-sticky dough. Knead it for 5 minutes, then cover it and leave it somewhere warm to rise. Punch it down, divide it in half, and roll each half into a 12 inch round. Leave it for 15 minutes to rise again.

Drain the lamb and fry it over high heat in the olive oil, until it is cooked. Take it out of the pan and let it cool.

Preheat the oven to 425 degrees F and grease 2 pizza pans or baking sheets. Put the dough circles on the pizza pans, pressing it until it covers the pans or baking sheets.

Arrange the lamb on top of the pizza crust, then the mushrooms, onions, tomatoes, olives and cheese. Bake for about 17 minutes, or until the cheese is melted and the dough is cooked and golden brown.
