Italian Sausage and Arugula Pizza With Onions and Peppers

Here is a short and simple pizza recipe you can put together fairly quickly with little fuss, and put something delicious on the table in minutes. There are a number of types and flavors of Italian sausage from mild to hot, sweet to savory. Choose your favorite style or blend a few different types for even more variety. As the recipe does not call for any seasonings, herbs or spice, a hotter Italian sausage might be the perfect choice. While the arugula adds a nice licorice like bite, if you cannot find it at your supermarket or farmers market, or if desired, baby spinach would do nicely here.

If you decide to make pizza dough from scratch, the recipe time could increase significantly as many dough recipes require time for the dough to rise once or twice before shaping. Homemade pizza dough may also require more time in the oven to properly bake and crisp up. A brushing of olive oil or a thin layer of ready-made or homemade tomato based pizza sauce would also be a nice addition, to add a little moisture and some extra flavor.

Italian Sausage and Arugula Pizza with Onions and Peppers

Ingredients:

8 ounces Italian Sausage, casings removed
1/2 small White Onion, thinly sliced
4 cups Baby Arugula
1/2 cup Roasted Red Pepper Strips
1 large Pre-Baked Thin Crust Pizza Shell
3/4 cup Ricotta Cheese
1-2 tablespoons Parmesan Cheese, grated

Preparation:
1. Preheat the oven to 450 degrees F.
2. In a large saucepan, over medium high heat, brown the Italian sausage well and drain off the excess fat.
3. In a separate large saucepan, over medium low heat, add the thinly sliced white onion and baby arugula.
4. Saute the vegetable mix until the arugula has wilted.
5. Stir in the red bell pepper strips and Italian sausage and heat until warmed through.
6. Spread the ready-made crust with 1/2 cup of the ricotta cheese and top with the sausage mixture.
7. Make dollops with the remaining ricotta and sprinkle with Parmesan cheese.
8. Bake directly on the oven rack placed in the center of the oven for 8-10 minutes.

Authentic Sauce - Italian Spaghetti Sauce From Scratch

Spaghetti sauce made from scratch is much nicer than anything you can get in a can or jar. Canned tomatoes feature in many authentic Italian recipes because they have such a strong and robust flavor. Combined with fresh tomatoes, as well as onions, garlic, herbs, beef, mushrooms and more, these result in a really great-flavored dish.

The best sauces need to simmer for a few hours, so the flavors can combine and blend properly so you will need to start cooking it long before you start cooking the pasta. Once you have tasted the following recipe, you will never want to use anything out of a can or jar again.

Step-By-Step Recipe

Peel two heads of garlic and chop and finally press each clove of garlic. Add these to a big pot, as well as a couple of chopped onions, a couple of chopped green bell peppers and a chopped bunch of celery. Turn the heat up and simmer the mixture for an hour. Turn the heat down to low and simmer it for two or three more hours. Add some sliced mushrooms half an hour before the end of the cooking time and serve it hot.

How To Serve It

The traditional way to serve this recipe is, of course, with spaghetti, but it is also good with penne, linguine, macaroni, or any other kind of pasta you like. You can either combine it with the pasta or serve it on top of a pile of hot spaghetti.

If you are not fond of pasta, why not serve it over a baked potato or mashed potatoes instead? Polenta, bulgur wheat, couscous, and rice are other options.

How To Store It

Make plenty because it keeps for a few days in the refrigerator. You can also freeze leftover sauce for a few months. The best way to do this is to use Ziploc bags and put two ladlefuls of sauce into each bag. This is one serving so thaw one bag of sauce for every person you want to feed.

The thawed sauce will taste as good as it did when it was freshly made and some people say it tastes nicer when you heat it back up after freezing it because the flavors will have intensified. Just warm it back up in a pan before serving it but do not let it boil.
