Lightly butter a 9x13-inch pan.

In a large bowl, combine the milk chocolate, chocolate chips, butter and marshmallow crème (and nuts if you're using them).

In a large saucepan, combine the evaporated milk and sugar. Cook over medium heat, stirring constantly. Bring to a boil for 4 minutes.

Pour hot sugar mixture over the chocolate mixture and stir with a large spoon until well blended. Pour into prepared baking pan. Let cool. Cut into squares.

A Pizza Lovers Dream - Making Pizza Crust "Crispy"

One of the most important aspects of making good pizza at home relates to oven temperatures. Oven temperatures vary when using typical home ovens. Though some home pizza makers have access to brick ovens or more elaborate forms of home ovens, many pizza lovers do not. These types of ovens are fantastic for pizza baking but the typical conventional oven found in most home kitchens require a slightly different approach.

Generally, typical conventional ovens do not compare, in terms of temperature generation with commercial ovens found in professional pizza parlors. Don't worry pizza lovers, there's still hope for home pizza makers.

Due to the "temperature factor", there are a number of things you must consider when preparing your pizza dough and baking your pizza pies at home, especially if you want a pie that's delightfully crispy, crunchy and irresistible.

The first consideration is water content when mixing the pizza dough. If you use olive oil as a fundamental ingredient for your pizza dough, consider using slightly less olive oil and replace this with a little more warm water. Adding a little more water to your mix of pizza dough will contribute to a crispier and flaky crust.

In addition, it's a good idea to roll your dough to a "paper thin" thickness. You can do this by "rolling out" your pizza dough directly onto the pizza peel. Of course before doing this, sprinkle cornmeal on the pizza peel to insure an easy transfer to the baking surface you plan to use.

Next, you'll want to use one of two techniques for baking your pizza to make sure your completed pizza boasts that delicious crispy pizza crust that we all crave. You'll want to choose a suitable "baking platform" or "baking surface".

Try one of the two techniques below for baking your pizza pies:

1- Use a "pizza stone"

or

2 - Use a "pizza screen"

If you decide to use a pizza stone, make sure you give the stone plenty of time to heat before transferring the pizza from the pizza peel to the stone. You'll want to follow the instructions provided with the pizza stone very accurately.

The transfer from pizza peel to pizza stone will be much easier if you lightly cover your pizza peel with cornmeal. This makes the transfer process from pizza peel to pizza stone a breeze.

When using a pizza stone, the goal is to have the ingredients of the pizza complete the cooking process about the same time the crust "completely" browns. Depending on your specific oven, temperatures, 425 to 450 should suffice. Of course you'll have to experiment with cooking times for your specific oven.

Be careful not to remove the pizza to early, as this is a common mistake. Allow plenty of time for the crust to brown, without burning the cheese. If need be, CAREFULLY take a peak underneath the pie to check your crust if you like. Remember, ovens are extremely hot!

The second way to achieve a nice crispy crust is to use a pizza screen. Though this can be a bit messy, this baking platform produces wonderful crispy pizza crust. The porous nature of a pizza screen allows heat to pass through the screen directly to the bottom of the pizza.

This helps with the moisture absorption process. Direct heat helps reduce the moisture content within the pizza dough and adds to the crispy nature and texture of pizza crust. Mmmm...I'm getting hungry just thinking about it...

Pizza screens are fairly cheap, and that's great because they get a bit "clogged" with toasted cheese and ingredients after several uses. Clean them thoroughly after each use to extend the life of your screen. Besides, you'll forget about the mess when you slide that first slice of crispy pizza into your mouth, I promise.

1/2 cup Self-raising Flour; sifted

1 can Condensed Milk

1 tsp Vanilla Essence

1 1/2 cups Dessicated Coconut

2 1/2 cups Pecans; coarsely chopped

1 cup Dried Apricots; chopped into small bits

1 1/2 cups Dates; coarsely chopped

300 g Candied Cherries; red and green; chopped

2 tbsp Icing Sugar; for decoration

Method:

Mix chopped pecans, apricots bits, dates and cherries together. Drizzle condensed milk over fruit mixture and keep stirring. Add in vanilla essence. Now add in dessicated coconut. Fold in sifted flour until no more flour lumps.

Spoon cake mixture into greased tube pan. Bake in preheated oven at 150°C for 20 minutes before upping heat to 170°C and bake for another 30 minutes.

Allow cake to cool a little before removing from pan. Dust cake lightly with icing sugar. Keep cake in air-tight container.

Simple No Bake Chocolate Macaroon Recipe

This recipe was a favorite of my sister and I. We loved it when my mom would make these. When we were old enough to cook, the house always smelled like chocolate macaroons. I think we made this recipe about a couple of times a week. They are very easy to make and super yummy to eat! What you need to make the macaroons:

Simple No Bake Chocolate Macaroon Recipe

2 cups granulated sugar

1/2 cup butter

1/2 cup milk

6 tbsp cocoa

1/2 cup fine shredded coconut

3 cups oatmeal

1-2 cookie sheets waxed paper

1. Combine the first four ingredients together in a large pot and bring to a boil for about 2-3 minutes, stirring constantly.

2. Take pot off of stove and add the coconut and oatmeal. Mix until everything is coated.

3. Place on a wax paper lined cookie sheet by heaping tablespoon-fulls. To have these cookies ready quickly, cool in refrigerator, or leave and let cool to room temp.

  • 1 bay leaf

  • Take out from the pan when the vegetables are cooked. Arrange the beef in a serving platter and surround with the vegetables.
  • Simmer down the sauce to desired quantity and thicken with flour. Pour the sauce over the beef and vegetables then serve.

* 4 oz. Cherries

* 32 oz. Dark Jamaican rum

* 6 oz. or 1.5 cup flour

* 8 oz. butter

* 8 oz. sugar

* 4 eggs

* ½ tsp. allspice

* ½ tsp. Ground cloves

* 1 cup wine/brandy

* 1 tsp. baking powder

* 1 tsp. vanilla

* 2 tbsp. browning

Directions:

Soak fruits, peels and rind in rum for two weeks before baking. In a separate bowl whip butter, sugar and browning until creamy. Combine dry ingredients in separate bowl and mix well. In a third bowl beat eggs and brandy together until well blended.

Add egg mixture to creamed butter mixture and blend well. Strain and add fruits, keeping rum for fruity drinks. Gradually mix dry ingredients to batter and fold together.

Pour batter into a lightly buttered 9" cake pan and bake at 350F for 1-½ hours checking after 1 hour. Sprinkle with powdered sugar before serving.

Best Fresh Salsa Recipe

Here is the best salsa recipe I have ever made.

My family does not even like regular jar or store bought salsa anymore. I use to make salsa and cook the ingredients on the stove but once was in a hurry and just used everything straight from the garden, after a little washing. The result was a flavor burst in my mouth with all the wonderful flavors that were not toned down by cooking them away.

Best Fresh Salsa Recipe

8 tomatoes

3 green peppers

4 jalapeno peppers (you can remove some or add some depending on your taste)

1 small onion

Garlic cloves or minced garlic

salt

Olive Oil

Parsley

Lemon or lime juice

Cut off the tops of the green peppers and remove seeds. Cut off the tops of the jalapenos but do not remove seeds. Cut the outer skin off the onion and cut in four sections.

Place these items in a food processor and run until everything is small. I usually do not leave big chunks of the jalapeno as small chopped bits blend better and give flavor throughout the salsa.

Drop in 1 teaspoon on minced garlic. You can use the stuff out of the jar from the store or put in 2 whole cloves.

Wash the tomatoes and cut off the tops and cut them in half our fourths and put them in the food processor on top of the already chopped up peppers and onions.

Process these until the tomatoes are well chopped. Open the food process and remove the container and put a strainer in your sink and pour the mixture from the processor into the strainer and let strain all the excess liquid from the tomatoes. I usually use my well washed hand in their to stir up the salsa and speed up the process but you can use a big spoon. When Most of the excess liquid is gone dump the strainer mixture into a bowl or container.

Add 1 teaspoon salt, 1 tablespoon dried parsley, 3 to 4 tablespoons lemon or lime juice. I prefer lime juice but once ran out and used lemon juice and it worked just as well. I use the bottled juice but it you have fresh it would be even better. Add 2 tablespoons of extra virgin olive oil.

Stir everything together with a spoon and quickly get out your chips and get some because as soon as your family knows you have homemade salsa made it will not be around for very long.

Yes! I did it! I love the confident feeling of learning something new.

Until yesterday I was sure of two edible mushrooms. Today I am sure of four. My two new delicacies are the Gem-studded puffball and the Pear-shaped puffball. I have a fifth under study.

Wild Edible Recipe: Sauteed Puffball Mushrooms

When I gather mushrooms, I put each species in a separate paper bag. When I get home, I take them out of the paper bag and begin my visual study.

The mushroom under study right now is the fawn mushroom. I found one on a hike with "Wildman" Steve Brill last month. I have found it twice since, but did not eat it. I just studied the shape, how the gills were attached and the stem. "Wildman" has made replicas out of Sculpey - which is an excellent way to improve observation skills. It's also fun.

I am cautious enough to consult other mushroom identification guides, but "Wildman" has the best photos and his sculptures are accurate. I am now making a spore print and when I do sample this mushroom, it will be a piece the size of a green pea.

THE RECIPE:

Sautéed Gem-studded (Lycoperdon perlatum) or Pear-shaped (Lycoperdon pyriforme) mushrooms:

1. Remove mushrooms from paper bag, trim dirt and wipe with a cloth or paper towel

2. Do not wash or immerse in water. Do not salt. That makes the mushrooms tough

3. Cut the larger mushrooms into bite-size pieces

4. Coat with olive oil and one-half teaspoon of lemon or lime juice

5. Set pan over low heat, then add coated puffball mushrooms

6. Cook until tender

Puffballs are fragrant when picked and they do have a distinct flavor, but it is delicate. I enjoyed it as a simple side dish.
