Papa's Pizza

This recipe takes about 2 hours from start to finish:

2 SHEET PIZZAS
7-1/2 cups bread or all-purpose flour
4 tablespoons sugar
3 teaspoons salt
1/4 teaspoon baking soda
2 packages of fast-acting dry yeast
2 cup water
5/8 cup buttermilk
3/8 cup extra virgin olive oil

Pizza Recipe

INSTRUCTIONS:

1. Place the first 5 ingredients in the KitchenAide pot, except 1-1/2 cups of the flour, and attach the flat blade. Turn the mixer on to speed 1 to blend the ingredients and let it run for 1 minute.

2. Put the liquid ingredients in a small bowl and heat to 125-130 degrees in the microwave (about 2 minutes).

3. Turn the mixer on to 1, and slowly add the liquid, then turn it on 2 and mix for about 2 minutes or until well blended.

4. Attach the dough hook to the machine and need the dough set on 3 for 7 minutes, slowly adding the rest of the flour right away.

5. Cover with plastic wrap and allow the dough to rise in a warm place (about 100-110 degrees) for 25 minutes, or until doubled in size.

6. Punch the dough down, replace the plastic wrap cover and let it rise for another 25 minutes.

7. Place the dough on a flat surface to divide into two 2 inch rounds. Put one round back into the pot and cover while shaping the other round to fit the olive-oiled baking pan.

8. Brush top of the dough with olive oil, cover with plastic wrap, and allow the dough to rise in a warm place for around 10 minutes or slightly risen.

Turn the oven on to 350 degrees to preheat.

9. Remove the plastic wrap and bake on the lowest rack for 16 minutes or until just browned. Turn the pizza bread once while baking for even browning. While the pizza is browning, shape and prepare the second round for rising and baking.

The pizza bread may be cooled and frozen at this point before going to the next step.

10. Cover with the pizza sauce (1-1/2 packets each), cheese, your favorite toppings, and a little more cheeses, and then place in the oven for around 12 minutes or until the pizza is hot and the cheese has melted.

Remove from the oven and let rest for 5 minutes before cutting and serving.

1. Have a plan. If you have a plan for the week you can make sure you have all the necessary ingredients in the house and save time by prepping foods in advance. Take a look at your week and plug in quick meals for busy nights, slow cooker meals for nights you need to eat as soon as you walk in the door, and more involved meals for days you have additional time.

2. Keep a list of family favorites. Making weekly menu plans will be easier if you have a list of recipes you've made before that your family likes. 6.Prep in advance. If you have a plan for the meals you're going to make for a given week, you may want to chop some of the vegetables up at once for the whole week. If you will be making three recipes with chopped onions, chop all the onions at once.

7. Keep frozen cooked meats in the freezer. Taco salad is a mainstay recipe in my house. When I make it, I usually make a double or triple batch of the browned meat and freeze one or two containers of this for a future dinner. I like to do the same with grilled sausage. I usually make extra sausage, cut it up and freeze if for future use in lasagna or jambalaya.

8. Side dishes don't have to be complicated. Simple sides can include fresh fruit, raw veggies or buttered noodles.

9. Entrées don't have to be complicated. A simple soup and salad dinner can be very satisfying. Tuna and Egg salad, whether served inside of a tomato or in a sandwich can be a quick dinner as well as a salad with cut up deli meats and cheese. Every dinner doesn't have to be a 5 star meal.

10. Some convenience foods are worth the convenience. It's hard to beat the price or convenience of a pre-cooked rotisserie chicken, bagged salads are often on sale and save a lot of time, and peeled baby carrots can speed up soups and stews. If you find these items on sale, you may find you not only save time but money as well.

11. Have fun and break the rules! Make breakfast for dinner, eat dessert first, have an indoor picnic. Spice up dinner by breaking your usual routine.

12. Recruit Help. Teaching your kids to help not only helps make dinner easier for you but will also help them in the future. If you are making dinner for just you and your spouse, consider doing it together. Dinner parties can even be a joint effort. When I was single, I used to have a lot of dinner parties. When guests arrived, I gave them a cutting board and a knife along with a drink. Themed dinners, such as an Asian dinner, work great with a lot of hands in the kitchen.

A little planning can help even the busiest person make healthy, homemade dinners without a lot of stress.

Types of Cheese For Pizza

Without a doubt the most popular cheese to use for pizza is mozzarella. This cheese originated in the Naples region of Italy and was first made from water buffalo milk. Original mozzarella was of very high moisture content, and had a short shelf life. The texture of original mozzarella did not lend to grating at all, and the cheese was usually cut into slices to be used.

Modern mozzarella is now made from cows milk, and is of a lower moisture content to help make it easier to work with and extend the shelf life. Mozzarella is available in a variety of moisture and butterfat content. A little experimenting to find which you like better will be needed, for different mozzarellas have different ways in which they melt and brown.

There is a fresh mozzarella sold that comes as balls of cheese packed in water. This cheese has a different texture and taste than regular mozzarella and can also be used on pizza. It does not grate as it is too soft, and it must be used fairly soon as it turns sour within a few days. This fresh mozzarella is sometimes called scamorze. But mozzarella isn't the only cheese you can use for pizza. Consider trying some of these others for different flavors.

Provolone - Non-smoked provolone has a nutty flavor, creamy texture, and is easy to grate and use. Smoked provolone has a more robust, smoky taste. Provolone can be used by itself, or in a combination with mozzarella.

Cheddar - From white to orange, from mild to sharp, cheddar is a good cheese for pizza. Cheddar melts well, but does not 'stretch', so it is always used in combination with mozzarella or provolone. The more cheddar you use in the blend, the milder it should be. The sharp varieties can dominate the flavor of the pizza, so use them sparingly.

Romano & Parmesan - These cheeses are most often used dried and grated over pasta dishes. They can be used on pizza for added flavor. Their flavor can be quite robust, especially the dried and grated kinds, so use accordingly. Parmesan is also available as fresh, and can be sliced or grated. Fresh parmesan has a better all-around flavor for pizza than the dried.

Feta - Feta cheese is a cheese that is cured in brine, and many times sold in small tubs of brine. It is an excellent cheese to use in combination or all by itself for pizza. Its salty, earth flavor holds up well after baking.

Swiss - Swiss is a very flavorful, salty cheese that not everyone likes used on pizza. It can add a great accent to a pizza, but as it is such a strong flavor should be used in a mixture of no more than 10% Swiss. Swiss can get rubbery after melting, another good reason to use it only sparingly and in a mixture of other cheeses.

Monterey Jack - This cheese is a good one for pizza, best used as a mixture of no more than 30% with other cheeses. Good quality Monterey Jack cheese has many small holes in it.

Muenster - A semi-soft cheese with a great flavor that can be used as an accent on pizza. Grates with difficulty. It can be sliced thinly and put on the pizza.

These are but a few of the alternatives to just plain old mozzarella cheese for pizza. Try other kinds, and see what combinations you can come up with that you like the best. Recipe for Easy Hawaiian Pizza

What You Need

  • 1/4 ounce active dry yeast
  • 1-1/4 cups warm water (110 to 115 degrees F)
  • 3 cups all-purpose flour
  • 1 Tablespoon sugar
  • 1 teaspoon salt
  • 1 jar marinara sauce
  • 3 cups mozzarella cheese, shredded
  • 1 cup cooked ham, diced
  • 1 8-ounce can pineapple chunks, drained

How to Make It

Dissolve the yeast in the warm water in a mixing bowl. Add the sugar and salt. Add the flour 1 cup at a time, stirring well until mixed thoroughly. Turn dough onto a floured work surface and knead until the dough feels elastic; about 6 to 8 minutes. Place the dough in a lightly oiled bowl and cover with plastic wrap. Set in a warm corner of the kitchen for about an hour so to let the dough rise.

Punch the dough down. Roll it out and shape it into a pizza pan. Spread the marinara sauce on the dough. Sprinkle liberally with cheese, ham, and pineapple.

Bake the pizza at 400 degrees Fahrenheit for 20 to 25 minutes. The crust should be browned and the cheese should be bubbly.

For those of you that are in need of a healthy pizza recipe, here you go:

Dough:

1 ½ cups Spelt Flour (if your child needs glutton free, try rice flour)
2 tablespoons baking powder
1 dash of salt
½ cup water
1 tablespoon Olive Oil

In a bowl, add flour, baking powder and salt. Mix well.

Create a well in the middle and add water and Olive Oil. Slowly mix in the dry ingredients into the water. Add more water if too dry.

Once everything is mixed, put dough on a floured surface, like a clean counter. Kneed for about 5 minutes, until dough is smooth and elastic. Then use a rolling pin to flatten out the dough, thin crust works best.

This recipe would feed 2 adults.

For your sauce, create your favourite pasta sauce or search for a prepared pizza sauce at your local grocery store...remember to read the ingredients first!

Then top your pizza with whatever you wish. Usually a great time to get in those nutritious greens.

Ingredients:

1 envelope active dry yeast
1/2 cup warm water
1 teaspoon sugar
1/2 cup milk
2 teaspoons sugar
1 teaspoon salt
4 tablespoons butter
3 1/2 cups all-purpose flour, divided

Preparation:

In a large mixing bowl, dissolve 1 envelope of yeast and 1 teaspoon sugar in 1/2 cup warm water. Set aside.

Scald 1/2 cup milk. Add 2 teaspoons sugar, 1 teaspoon salt, and 4 tablespoons butter. Stir until dissolved and let cool to lukewarm.

Add milk mixture to the dissolved yeast in large mixing bowl and stir well.

Add 1 1/2 cups flour to liquid mixture in the large mixing bowl and beat well. Add the remaining 2 cups of flour, a little at a time, and mix to attain a soft dough.

Grease a large bowl for rising. Form dough into a ball, place it in the bowl and turn over, so that the top is greased as well. Cover with a cloth and set in a warm place to rise until double in bulk, about 1 hour.

Punch down dough. Turn out onto a lightly floured surface and knead until smooth, about 2 minutes.

Separate dough into 12 pieces. Form dough into ovals about 2 inches wide and 3 inches long. Place on greased baking sheet. Brush tops with milk. Cover lightly with cloth and set in a warm place to rise until double in bulk.

Preheat oven to 400 degrees F. Place rolls in preheated oven and bake for 15 to 20 minutes. Remove from oven when lightly browned.
