Using Blue Cheese in Pizza Recipes

Blue cheese is not used on pizza anywhere as often as other cheeses, especially mozzarella and parmesan, but it can be a great ingredient if you know how much to use and what to combine it with.

Blue cheese is a goat's milk or cow's milk cheese with a bluish-green or blue mold growing in it. The mold is from mold spores. A lot of modern blue versions are either injected with mold or the mold is mixed in with the curds. This is to ensure an even distribution. Roquefort is injected with mold and Gorgonzola has the mold combined with the curds. A lot of blue type of cheeses still need to be aged in the original caves where they developed their reputations and names, to make them authentic.

Does Mozzarella Cheese Go Bad?

All cheese goes bad, but it all goes bad in different times and in different ways. It is important that you properly care for the cheese that you purchase and store it correctly so that it will stay for as long as its shelf life allows. Cheese that isn't taken care of properly will end up going bad and will be unsafe to eat. If you take care of it, you may be able to get more shelf life out of your cheese and use your mozzarella cheese to the end of the ball, loaf, of whatever other form it came in.

Fresh mozzarella or the buffalo mozzarella has a much shorter shelf life than the other kinds of mozzarella cheese. It is important that you use this mozzarella cheese up as quickly as you can. This cheese has not been aged, so it doesn't have the same shelf life as the ones that have been aged properly. It is important with fresh mozzarella that you use it up in a couple of days. If you see mold on this kind of mozzarella cheese or if you see that it has an odd smell to it, you are going to want to toss it.

\"Pizza Recipe\"

If you are purchasing mozzarella like part skim or the whole mozzarella that has been aged and through the entire cheese making process, it will have a longer shelf life. This mozzarella cheese lasts longer because it has been through the aging process which basically helps to create a little more preservation. This cheese will not last forever, but it will last a lot longer than the mozzarella that is fresh. Even with this mozzarella, if you see some mold on it, it is still OK to eat. But, you will want to be sure that you properly remove the mold, which means cutting it out and ensuring that there are no mold spores left on the cheese, it will still be good to eat as long as the mold is all gone.

Does Mozzarella Cheese Go Bad?

Long answer short, mozzarella cheese does go bad, but it will last for a while depending on the kind that you get. Your fresh mozzarella is going to go bad a lot quicker than the mozzarella that has been aged. Feta Cheese And Spinach Pizza Recipe

The most popular pizza in the United States is topped with mozzarella, tomato sauce, and pepperoni but sometimes it is nice to try something different. If you are looking for new recipe ideas, what about trying the following feta cheese and spinach pizza recipe?

The bold flavors go together perfectly. The addition of olives, fresh rosemary, and feta cheese give this pizza a wonderful Greek flavor. If you do not have spinach, you can use chard instead. Make sure it is tender and seasoned well before adding it. This recipe makes two nine inch pizzas or one fifteen inch one.

\"Pizza Recipe\"

This pizza is a nice one to make for kids as well as adults. If you are catering for a buffet you could even make this and serve it hot, warm, or chilled. You can double the recipe if you like and make a big rectangular one, which you can then slice into squares. Leftover pizza keeps well in the refrigerator for a couple of days but this one is so good it is unlikely you will have any leftover!

Feta Cheese And Spinach Pizza Recipe

Take care not to overcook the spinach. It will only take a minute to wilt and it needs to keep its bright green color, else it will go soggy and lose some of its flavor. Put the cooked greens in a chilled metal colander or sieve when they are done so they will cool down faster. The combination of three cheeses in this recipe helps to make it extra special and the feta, in particular, is amazing with the spinach.

What You Will Need:

  • Pizza dough
  • 1/2 thinly sliced red onion
  • 1 tablespoons extra virgin olive oil
  • 6 chopped, pitted kalamata olives
  • 1 teaspoon minced lemon rind
  • 8 cups rinsed, de-stemmed spinach
  • 3 oz crumbled feta
  • 2 finely chopped cloves garlic
  • 1/2 oz grated parmesan
  • 1/4 lb grated mozzarella
  • 1 teaspoon chopped fresh rosemary
  • Garlic oil, salt and pepper

How To Make It:

Heat two teaspoons of the oil in a pan and saute the red onion with some salt and pepper for five minutes or until tender. Add half the garlic and cook for one minute. Transfer the mixture into a bowl.

Heat the rest of the oil in the pan and wilt the spinach with a pinch of salt and pepper and the remaining garlic. After one minute or when the spinach has wilted but is still brightly colored, take it out of the pan and let it cool. Use your hands to squeeze out the excess moisture then chop it and toss it with the lemon peel. Preheat the oven to 500 degrees F. Roll out the dough and put it on a greased peel or pan.

Brush the garlic oil over it, and then spread the onion over the crust and the spinach. Sprinkle the olives, feta, and mozzarella on top. Bake it for ten minutes or until the crust is crispy and golden brown. Sprinkle some rosemary and parmesan over the top and serve.

Feta Cheese And Spinach Pizza Recipe

There are great pizza recipes for any occasion and making a Greek pizza with spinach and feta is a very good idea. You can make the whole pizza yourself using a homemade pizza dough recipe or you can buy a pizza crust and prepare the toppings yourself.

How Is Mozzarella Cheese Made?

There is a specific process that goes into making any brick of cheese. Mozzarella is just like any other, where there is a unique process that goes into making an excellent block of cheese that has just the right consistency and amount of moisture. Knowing the work that goes into making a block of cheese and the time that it takes to perfect a great ball of mozzarella cheese and have a great tasting cheese that people will be able to enjoy.

Ingredients for Mozzarella Cheese

\"cheese Pizza\"

The first thing to understand when it comes to making mozzarella is what goes into it. There are generally two types of milk that go into the cheese. There can be domesticated water buffalo milk that is used or they can use the standard cow milk. However, the water buffalo is the traditional mozzarella milk that is used, and that is why they have named some mozzarella as buffalo mozzarella. There also is rennet that is added, which helps to coagulate the milk and create the curds. These are the important ingredients that are needed to create a great ball of mozzarella cheese that will be used for a variety of great food dishes.

Process of Making Mozzarella Cheese

Once the cheese curds have been created by adding the rennet to the water buffalo milk, the process of making mozzarella cheese really begins. As the curds sit to complete a process called healing where the curds firm up, the process is in full effect. Once the curds are firm, they are cut into large pieces and are stirred up and heated so that now the curds can be separated from the whey. Once the whey has been separated, the mozzarella cheese must be formed into a ball, so the curds are put in a hoop so that a ball is formed, and the curds are not removed from this hoop until they have reached a pH level of between 5.2 and 5.5. Now, the cheese can be kneaded into the consistency we are used to in mozzarella cheese. Just like a baker forms bread into loaves, the cheese will be formed into balls and packaged so that it can be sold or used.

The process of making mozzarella is a great one to understand. There is truly some hard work that goes into making a great ball of mozzarella cheese that is going to work great with all of the best dishes for this cheese type.

Types of Cheese For Pizza

Without a doubt the most popular cheese to use for pizza is mozzarella. This cheese originated in the Naples region of Italy and was first made from water buffalo milk. Original mozzarella was of very high moisture content, and had a short shelf life. The texture of original mozzarella did not lend to grating at all, and the cheese was usually cut into slices to be used.

Modern mozzarella is now made from cows milk, and is of a lower moisture content to help make it easier to work with and extend the shelf life. Mozzarella is available in a variety of moisture and butterfat content. A little experimenting to find which you like better will be needed, for different mozzarellas have different ways in which they melt and brown.

Pizza Recipe

There is a fresh mozzarella sold that comes as balls of cheese packed in water. This cheese has a different texture and taste than regular mozzarella and can also be used on pizza. It does not grate as it is too soft, and it must be used fairly soon as it turns sour within a few days. This fresh mozzarella is sometimes called scamorze. But mozzarella isn't the only cheese you can use for pizza. Consider trying some of these others for different flavors.

Provolone - Non-smoked provolone has a nutty flavor, creamy texture, and is easy to grate and use. Smoked provolone has a more robust, smoky taste. Provolone can be used by itself, or in a combination with mozzarella.

Cheddar - From white to orange, from mild to sharp, cheddar is a good cheese for pizza. Cheddar melts well, but does not 'stretch', so it is always used in combination with mozzarella or provolone. The more cheddar you use in the blend, the milder it should be. The sharp varieties can dominate the flavor of the pizza, so use them sparingly.

Romano & Parmesan - These cheeses are most often used dried and grated over pasta dishes. They can be used on pizza for added flavor. Their flavor can be quite robust, especially the dried and grated kinds, so use accordingly. Parmesan is also available as fresh, and can be sliced or grated. Fresh parmesan has a better all-around flavor for pizza than the dried.

Feta - Feta cheese is a cheese that is cured in brine, and many times sold in small tubs of brine. It is an excellent cheese to use in combination or all by itself for pizza. Its salty, earth flavor holds up well after baking.

Swiss - Swiss is a very flavorful, salty cheese that not everyone likes used on pizza. It can add a great accent to a pizza, but as it is such a strong flavor should be used in a mixture of no more than 10% Swiss. Swiss can get rubbery after melting, another good reason to use it only sparingly and in a mixture of other cheeses.

Monterey Jack - This cheese is a good one for pizza, best used as a mixture of no more than 30% with other cheeses. Good quality Monterey Jack cheese has many small holes in it.

Muenster - A semi-soft cheese with a great flavor that can be used as an accent on pizza. Grates with difficulty. It can be sliced thinly and put on the pizza.

These are but a few of the alternatives to just plain old mozzarella cheese for pizza. Try other kinds, and see what combinations you can come up with that you like the best. When using other varieties of cheese, remember that as a rule of thumb it is best to blend them with mozzarella or provolone to see what they will taste like. Buon appetito!
